Khava Poli
We’ve just stepped
into the New Year and with many upcoming festivals that got trailed after the recent
celebration of Gudhi Padwa; getting out of the festive zone seems to be a
difficult task.
With snacks
and sweet delicacies everywhere, one cannot resist going on a spree. Well, to
celebrate the sweetness of the festivities- I bring you the much-liked dessert
of all- Khava poli or Khoya Roti.

Ingredients:
1 large bowl
of Khava(Khoya)
1 small bowl-
clarified butter (ghee)
3/4 bowl- Powdered
sugar
1 bowl-
Wheat flour
1/2 bowl-
Rava
1/2 tsp-
Cardamom powder
1/2 tsp-
Nutmeg powderWater for
kneading the dough
Method:
In a skillet
pan, roast khoya on a low flame for 5 minutes.
After roasting
for 3 to 4 minutes, you'll notice ghee accumulating over the khoya. This
indicates that your khoya is nicely roasted.

Remove the
khoya from the flame and allow it to rest for a minute.

Now add powdered sugar into the khoya and keep this mixture in the fridge for about 5 minutes. With this slightly hardened texture, rolling out the roti becomes easy.

Remove the
mixture from the fridge and add cardamom powder and nutmeg powder into it. Knead
this filling, till it becomes soft in texture.
For the
dough, add 1/2 cup of water (not at once), rava and 1 tbsp of ghee into the wheat flour. After nicely
kneading the dough; pinch small dumplings out of it.

With the
help of your thumb, gently press the dumpling and rotate it round with rest of
your fingers. In this hollow shape, place the khoya mixture and pleat the edges
to form a ball.


Dust some flour
over the board and roll out the roti, carefully. Be very gentle while rolling
this stuffed roti, as there are high chances of filling to come out.

On a hot
tava, place the roti and spread ghee over it. Flip and repeat the process.
Roast till it becomes nice brown and crispy.

Serve hot
with dollop of ghee over it. I assure you, this amazing delicacy is bound to
melt in your mouth.
