Beet-Kokum Juice

would’ve surely got tired of eating Diwali snacks.
No matter how many times you avoided dragging yourself away from Chivda, Chakli and Laddoo, you’ve always ended up eating them, that too, whole-heatedly. Now that you’ve indulged into a “food-guilty pleasure” it’s time to reward yourself with a health potion.

Kokum-Beetroot
Juice is that healthy punch which is recommended to spree on - Post Diwali.

medium-size beetroot
5 tbsp Kokum Syrup
1 tbsp sugar
1/4th tbsp salt
½ tbsp chaat masala
3 tbsp fresh lemon juice
200 ml chilled water
2-3 ice cubes

2-3 ice cubes
Peel off the
beetroot and cut it into 5 to 6 slices; in a small pot of mixer add in some
portions of sliced beetroot; blend these slices by adding 5 tbsp of water. Repeat
the procedure for all the slices you’ve made. If your mixer pot is not that
small, you can add all the slices at once.
The juice you’ve extracted is at its raw form and hence the taste will be intense and bitter, so consumption of this juice is not recommended. To make it flavourful and soothing, add 150 ml of chilled water with 3 tbsp of lemon juice. Now add chaat masala, salt, sugar and kokum syrup to it and give it a nice stir.
After making
the paste make sure you strain the paste through the strainer until the smooth rich-dark-red
coloured juice drops down. While the juice gets dropped down in a separate bowl,
the pulp remains collected in the strainer itself. You can add more water in small quantity to the paste and try to extract as much juice as you can from the
paste. For one beetroot you can approximately get half cup of juice but at
times varies depending on the extraction process.

Place the
ice-cubes at the bottom of the glass and pour this juice over it.

*It is
perfectly fine to not use ice-cubes as we’ve already used chilled water.
