Recipe: Crispy Corn Roundels
Crispy Corn Roundels is a different version of coin pizza which
predominantly consists the same ingredients that goes into a regular pizza but
with a twist. You can devour on this pizza guilt free because adding cheese is
not mandatory here. This recipe is amazingly delicious to fall for and I am sure if
you try making it once you would definitely make it for the next time.

Ingredients:
1 cup of boiled sweet corns
6 slices of multigrain bread or brown bread or white bread
5 tbsp green chutney
1 tbsp oil
5 tbsp butter
1 tsp mixed herbs
1 tsp chaat masala
4 tbsp. tomato sauce
1 tsp salt
mozzarella or processed cheese (can be varied as per choice)
For green Chutney:
Take half a bunch of roughly chopped coriander, 1 large green chilli or 2 small chillies, 1 pinch of asafoetida (hing), ½ tbsp of cumin seeds (jeera),
7-8 roasted peanuts,1tbsp desiccated coconut powder, 1 tbsp sugar, 1 tbsp salt or as per the requirement.
Add all the above specified ingredients into the mixing bowl and blend it. Add very little amount of water in order to get a smooth consistent texture to the chutney.

Method:
Heat oil and 1 tbsp
of butter in a pan; add mixed herbs and green chutney into it. Now mix boiled sweet
corns and chaat masala; sauté it for 1-2 mins.
Cut bread into circular discs with the help of a round cookie cutter or a bowl, apply butter on each side of the bread and toast it on a pan until it turns golden brown. (You can toast the breads in oven and can opt for applying very less butter)
On nicely toasted bread, spread 1 tbsp of tomato sauce, place the corn mixture on top of it and add grated cheese accordingly.
Toast these roundels again & place a lid on the top. This will let the cheese melt and makes the bread even more crispy & tasty.
Serve Hot
Voila! Simple isn’t it? 😃
